Bean quality

Bean quality — visual guide

No technique rescues a bad or stale bean. Coffee is best from about 5 days to 4 weeks after roasting — too fresh and it's gassy and unstable, too old and it's flat. Check for a roast date, not a use-by, and that the bag is meant for espresso.

Quick cue

Buy roasted-on dates, not best-before. Use within about a month of roasting.
