Brew ratio

Brew ratio — visual guide

The ratio is the weight of dry coffee in versus the weight of liquid espresso out. A common starting point is 1:2 — 18g in, 36g out. A shorter ratio is more intense and syrupy; a longer one is lighter and more drawn-out.

Quick cue

Start at 1:2 and adjust to taste. Weigh both sides with a scale.
